On October 28, the Church celebrates the feast of the Apostles Saints Simon and Jude. Both of these apostles have struggled with mistaken identities. Simon is also the name of Simon Peter and Jude was often spelled Judas, so confused with Judas Iscariot, the traitor. St. Simon is the patron saint of curriers, and tanners. St. Jude is known as the patron saint of desperate situations or impossible causes. What could be better than an”” impossible pie to remind us of St. Jude’s intercession for us with impossible causes. This is a pie that does the impossible by making its own crust while it bakes.
